Copycat Recipe: The Cheesecake Factory's Georgia Peach (4 servings)

  • 1/2 cup Skyy vodka
  • 1/4 cup peach liqueur
  • 1 cup frozen peach slices (use fresh peaches when in season)
  • 1 cup crushed ice
  • 1/3 cup fresh raspberries
  • 1 tablespoon grenadine
  • mint sprigs, for garnish
-Pour vodka and peach liqueur into a blender.
-Add peaches and crushed ice. Blend until slushy.  Pour into glasses.
-Puree the raspberries and grenadine using a mini-processor or an immersion blender.
-Swirl the raspberry puree into the peach mixture in the glasses.
-Garnish with a mint sprig.  Serve immediately.

Notes: The addition of grenadine makes it easier to puree the raspberries.  If using frozen 
             raspberries, allow them to thaw first.
