Baileys® Irish Creme Parfaits (makes 4)

  • 12 Oreo cookies, crushed
  • 1/2 cup milk
  • 2/3 cup semi-sweet chocolate chips
  • 2 cups heavy cream
  • 1/2 cup confectioners sugar
  • 1/3 cup chilled Baileys® Irish Creme
-Heat the milk in a large bowl (at least 2-cup capacity, a glass measuring cup is 
 perfect) for 2 minutes on HIGH in your microwave.
-Stir the chocolate chips into the hot milk.  Wait 30 seconds.  Stir again until the
 chocolate dissolves.  Allow time for this mixture to come to room temperature.
-Crush the Oreos in a food processor or in a plastic zipper bag using a rolling pin.
-In the bowl of your mixer, whip the cream for 4 minutes (if possible, place the 
 bowl in to your fridge ahead of time to chill).
-On a low speed, mix the confectioners sugar and the chilled Baileys® into the
 whipped cream.
-Remove half of the whipped cream/Baileys® mixture to a separate bowl.
-With the mixer on the lowest speed, slowly pour the chocolate mixture into the
 remaining whipped cream.
-To assemble the parfaits (you will need 4 parfait glasses): 
  • Spoon two heaping tablespoons of the white whipped cream mixture into each glass.
  • Add a heaping tablespoon of the chocolate whipped cream mixture.
  • Sprinkle in two heaping tablespoons of crushed Oreos.
  • Add two more heaping tablespoons of the chocolate whipped cream mixture.
  • Add a final tablespoon of the white whipped cream mixture.
  • Top with a tablespoon of crushed Oreos.
(Layers may be adjusted depending upon the size of your glasses!)
