Grilled Garlic and Lemon Buttered Scallop Recipe

 2 pounds large fresh scallops
8 slices of regular or turkey bacon( precooked if you like crispy cooked bacon)
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons minced garlic
1 teaspoon of soy sauce
1/2 cup melted butter added to this is 1/2 teaspoon each of garlic powder, and parsley.
black pepper to taste
wooden toothpicks or metal or wooden skewers,
Directions:
Combine lemon juice, soy sauce, oil, and black pepper in a medium bowl. Add scallops to mixture and toss to coat. Cover and allow to sit for 5 to 10 minutes at room temperature, I have done this in the refrigerator for hours as well before. Preheat grill for medium-high heat. Cut bacon into thirds. Wrap a piece of bacon around each scallop and thread onto toothpicks, actually the idea came from a reader of mine Sandi, she inspired me to use toothpick in a conversation we had on facebook. Usually I just lay them on aluminum foil or place inside the cast iron pan show above.Place the bacon seam side down. You can also use wooden or metal skewers as well, if you have them. Place on grill and cook basting with melted herbed butter for 3 minutes per side. When the scallop is opaque in color, remove from grill and serve. Bacon will not be fully cooked if you use regular bacon and want to eat the whole thing, so I recommend to you to use precooked. I use it for flavoring and remove it before eating the scallops. Another method if you don't happen to have a grill is to broil these for 3 to 5 minutes per side in a conventional oven.
