2 pkgs (or 4 1/2 tsp) active dry yeast
1 1/2 cups warm water (110 degrees)
1 1/2 cups milk, scalded and cooled
1/2 cup sugar
2 tsp salt
2 eggs, lightly beaten
1/2 cup softened butter
7 to 7 1/2 cups sifted all-purpose flour
Sprinkle yeast over warm water in mixer bowl; let sit for 5 minutes. Stir to dissolve.
Add milk, sugar, salt, eggs, and butter to mixer bowl. Mix on low until blended; add flour, 1 cup at a time, until dough is smooth. You will probably need to remove the dough from the mixer to knead (it's a very large amount of dough).
Knead for 5-8 minutes, until smooth and elastic, adding more flour as needed. Form dough into ball, and place in oiled bowl.
Let rise for 90 minutes. Punch down, and shape for recipe.
