Quick Vegetable Fried Brown Rice

Quick Vegetable Fried Brown Rice from We are not Martha


•  2 cloves of garlic, minced

•  roughly 2 handfuls of shredded carrots
• 1/4 cup thinly sliced scallions
• 1/2 cup onions, chopped
• 1/2 cup red peppers 
• 1/2 cup frozen peas 
• 3 cups of cooked and cooled brown rice 
• red pepper flakes, as you'd like 
• 3 teaspoons light soy sauce 


1) In a nonstick skillet add garlic and let lightly brown. 

2) In the same skillet, add vegetables and a drizzle of olive oil (or peanut oil). Stir frequently allowing scallions to wilt a bit, about 4-5 minutes. 

3) Add red pepper flakes and soy sauce.

4) Serve immediately .
