Zucchini and oat Burger with goat cheese

rom Burgers, Bagels, Wrap & Co, makes 3 burgers (big eaters will take 2 burgers)

- 3 burger buns
- 1 small jar of tomato sauce
- 1 small log of fresh goat cheese 
- oil
- 75g spinach baby shoots or rocket salad
- 40g oats
- 1 egg
- 60ml milk
- 1 medium zucchini
- 1 small shallot
- 1 small tsp thym

- salt and pepper

Pour milk over oats and thyme in a small bowl,  season with salt and pepper and stir well.

Peel zucchini and grate half of it, cut the remaining part in slices.

Peel and chop shallot, add it with grated zucchini to the egg and oat mixture. Mix well.

Heat oil in a large pan and cook zucchini slices until tender, reserve.

In the same pan, pour some oil and make some savoury pancakes with the zucchini and oat mixture (I made 3 using pastry rings). Cook for 3 minutes on each side.

Turn on the grill of the oven.

Cut the buns in two halves, and spread some tomato sauce on half of them. Add a savoury pancake, zucchini slices and top with a slice of goat cheese (not too much, but well spread).
Grill just so that the goat cheese begin to melt (be careful not to burn them). Grill the remaining halves of the burgers for 1 minute in the oven, sprinkle spinach shoots over melted cheese and close the burgers.
