Walnut brioche

For 1 big brioche : 
- 500g flour (a bit more than 1lb)
- 125g butter (a bit more than 1 stick)
- 125g sugar
- 25g fresh yeast
- 2 eggs
- 2dl milk
- 1/2 tsp salt
For the filling :
- 100g walnuts
- 75g almond
- 75g sugar
- 1 egg
- 1/2 tsp cinnamon
Make a leaven : mix the fresh yeast with a bit of lukewarm milk (taken from the 2dl) ; by hand, add a enough flour to obtain a soft dough, let it rise in a warm place (not over 30°C) - well I don't know why but my dough never rose, so I followed the next steps.
When it has doubled in size, put it in the center of the flour, in a big bowl.
Add the eggs, and start kneading the dough with your fingers, still in the center of your bowl. The flour will slowly incorporate itself.

While your doing this, put milk, salt, sugar and butter (diced) in a saucepan. Let it heat just a bit, it musn't exceed 30°C, or it will "kill" your yeast.
Pour the milk in your leaven and keep mixing with your fingers. If the butter isn't completly melted, let it melt off the heat.
When all the flour is incorporated, start kneading the dough with the whole hand, so that you handle the most of the dough. This will take about 30 minutes, until the dough doesn't stick to the bowl or to your hand.

Cover your bowl with a clean cloth and leave it in a warm place (30°C) off the draught. After between 2 to 5 hours, it must have doubled in size and it is a bit crazed on the surface. Be patient... it's worth it !
Transfer on a clean surface, roll it so you have a 50x25cm rectangle.

In a bowl, prepare your filling. Mix egg, sugar, cinnamon, walnut and almond. Spread this mixture on the dough, and level out. I put sugar, walnut and almond in a mixer, then I added the egg - be careful not to get a powder if you do this too.
Roll up the dough lengthwise, then cut the roll into 7 buns.

Grease you baking tin, arrange the buns so they stand next to one an other, but not touching.
Let it rise in a warm place (1 hour). Bake it for about 45 to 50 minutes at 140°C.
