Poached Cod with mustard sauce and potato wedges

Makes 4 servings

- 4 cod fillet

- 25g butter

- 1 1/2 tsp dijon mustard

- juice of 1/2 lemon

- 10cl heavy cream

- a few springs of fresh parsley

for potatoes :

- 2 to 3 potatoes by person

- paprika

- dried Provence herbs, or dried oregano

- about 3 tbsp olive oil

- sea salt

For potatoes : preheat the oven to 180°C. Wash potatoes than dry them briefly. Cut them in 4 wedges lenghwise. In an baking tin, pour olive oil, add potatoes randomly and stir well to coat them. Sprinkle with paprika, then herbs and stir again.

Place them on their edge, and bake for about 30 minutes in the preheat oven.

 Once it's cooked, sprinkle with sea salt.

For the fish : bring water to a boil with salt. Poach the fish for about 10 minutes.

Sauce : melt butter in a saucepan with mustard. Stir well with a wooden spoon, and once it's homogene, add the heavy cream. Mix again then add lemon juice (don't pour everything at once, taste and see if it needs more). Let it thickens for a few seconds then turn off the fire.

Add chopped parsley and season to taste, if needed.

Serve the cod coated with the sauce, potato wedges and a bit of lettuce or broccoli...
