Indian chicken Burger

from Burgers, Bagels, Wrap & Co, makes 4 burgers (big eaters will take 2 of them)

- 4 burger buns or naan bread

- 300g chicken

- 1 small onion

- 1 tsp tandoori or curry powder

- 1 egg

- 2 tbsp frozen chopped coriander

- a few leaves of lettuce

- oil

- mango chutney

- 1 tomato or many cherry tomatoes (even better)

raïta sauce :

- 1/2 cucumber (a small one, or one mini-sized one)

- 1 greek yogurt

- 2 tbsp chopped frozen mint

- salt and pepper

Peel and chop onion, grind chicken (with a food processor).

Beat egg and add minced chicken, onion, spices (tandoori or curry), coriander and salt. Mix well.

For raita sauce,  peel cucumber, cut one third of it in slices and take off the seeds of the remaining two thirds before grating them.

Mix the grated cucumber (reserve the slices) with yogurt, mint and season with salt and pepper.

Heat a large frying pan with a bit of oil on medium heat, pour portions of meat mixture to form 4 savoury pancakes. Cook for 5 to 6 minutes per side.

To assemble, cut burger buns in two halves and grill them in the oven for 1 minute, spread each halves with raita sauce, add one savoury pancake, slices of cucumber and tomato, and some lettuce.

Spread some mango chutney on the other halves and top the burgers with them before serving.
