Hachis Parmentier (english version)

Makes 5 servings :

- 1.5 kg potatoes

- 400g minced beef

- 150g  sausage meat (that's what makes all the difference, don't forget it)

- 2 onions

- 1 garlic clove

- 3 tbsp chopped parsley

- vegetable oil

- 1 egg

- 70g butter (I used much less)

- 10cl milk

- 40g grated cheese

- salt, pepper


Wash potatoes, peel them then cut them roughly and cover them with cold water in a big saucepan.

Bring to a boil and let it cook for 30 minutes or until tender.

 Warm the milk, crush potatoes with a vegetable mill or potato-masher (but NOT food processor!) and incorporate milk, butter (recipe says 50g but I don't use any, or if I do I use less, but that's just me), and salt.


While potatoes are cooking, peel the onion and chop it, then brown it in a bit of oil.

When it is browned, add meat (minced beef and sausage meat) and let it brown quickly stiring constantly with a wooden spoon. Take off the heat, and add parsley, egg, and minced garlic clove. Season to taste.


Preheat the oven to 210°C.

Butter an oven dish, pour in the bottom of it half the potato puree, cover with hachis (meat) then spread the remaining puree. Even the top of the dish with a fork (easier than with a spoon), sprinkle with grated cheese and butter. Bake for 20 minutes, serve warm with a green salad.
