Easy Sweet Potato Pie (without a crust!)

Ingredients
  • 2 cups sweet potatoes, cooked and mashed (about three average sweet potatoes)
  • 1 cup sugar
  • 1 cup evaporated milk
  • 3 eggs
  • 2 1/2 Tbsp. butter
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/4 tsp. cloves, ground
  • Dash of nutmeg
  • 2 Tbsp. flour
  • 1 tsp. salt 
  • Whipped cream, for serving (optional)


Directions
  1. Preheat oven to 350º F.
  2. Boil the potatoes over high heat until tender, about 20 minutes.
  3. Mash the sweet potato. You may leave some chunks in there for texture.
  4. Combine all ingredients in mixing bowl and mix well.
  5. Pour into pie shells or greased pie tins.
  6. Bake at 350ºF for 25 to 30 mins.
  7. Allow to cool, then top with whipped cream before serving
  8. Enjoy!
