Make 30

  • 1 egg
  • 250 g butter 
  • 350 all-plain flour
  • 150 g brown sugar
  • 1tsp mix spices ( nutmeg,ground ginger, cloves and pepper)
  • 1 tsp cinnamon
  • 5 g baking powder
  • 5 g salt

Preheat the oven to 180C/350F/Gas 4. Line a baking tray with greaseproof paper.
In a bowl mix sugar, spices and salt
In another bowl, mix together the flour, baking powder  and butter  until well combined, add egg and the sugar spices.
Using your hands, bring the mixture together as a dough.
Reserve the dough in the fridge for 2 hours
Turn the dough out onto a lightly floured work surface and roll out to a 3/4 mm.
Using a cookie cutter, cut out shapes  from the dough and place them onto the lined baking tray.
Transfer the biscuits to the oven and bake for 15-18 minutes, or until golden-brown. Set aside to cool on a wire rack, then serve.
