Tortilla Soup

1 1/2 cup chopped onion
1 garlic clove, minced
4 cups (1/2 inch cubed peeled sweet potato (about 1 1/2 pounds) softened in microwave
1 1/2 cups vegetable broth
1 cup chopped red pepper
1/2 cup water
1/2 tsp salt
1/2 tsp ground cumin
1/4 tsp black pepper
1 (14.5 oz) can diced tomatoes, drained
1 (4.5 oz) can chopped green chiles, drained
1 1/2 cups cooked small red beans

Saute onion and garlic. Add sweet potato and remaining ingredients except beans. Puree and add beans. Cover and simmer for 45 minutes - one hour.

***I prefer to use the lighter skinned, yellow flesh sweet potatoes. I like the flavor and color better, but this is good with any sweet potato really.***
