Tomato Basil Soup

1 onion chopped
4 - 6 garlic cloves
1 cup fresh basil leaves (pressed down)
2 28 oz. can chopped tomatoes
½ cup water
1 ½ cups V-8 juice
1 cup soy or rice milk

Place all ingredients, except milk, in a large pot. Bring to boil, reduce heat, cover and simmer for 1½ hours. Add soy or rice milk - heat

I really have no idea why I call this Tomato Basil Soup.  I don't think I've ever made it with fresh basil! You may substitute it with brussel sprouts, broccoli, cauliflower, etc.  We love brussel sprouts or cauliflower the best.
