Tofu Loaf

30 ounces water-packed firm tofu
1 2/3 cup quick oats
¾ cup whole wheat bread crumbs
½ cup ketchup
1/3 cup soy sauce
2 tablespoon mustard
2 tablespoon Worcestershire sauce
¼ teaspoon garlic powder

Drain tofu well and mash finely, using a bean masher and your fingers. Place in a large bowl and add remaining ingredients. Mix well, using fingers. Put in loaf or square pan. Bake square pan 45 minutes, the loaf pan for 60 minutes @ 350 degrees. Let rest 5 minutes.

I bought a mini brownie pan from Pampered Chef and have been using that to make mini Tofu Loaves.  They are perfect servings sizes and make freezing extras a breeze.  They take about 35-40 minutes to bake.
