Cornbread

1 cup cornmeal

1 cup whole-wheat pastry flour

1 TBSP baking powder

½ tsp salt

1 cup non-dairy milk

¼ cup unsweetened applesauce

¼ cup pure maple syrup

 
Preheat oven to 400 degrees.      Mix cornmeal, flour, baking powder and salt.      Add milk, applesauce and syrup and stir until just combined.      Pour into 8x8 pan.      Bake for 20 minutes or until done.
