Vegetable fried rice with seasoned tofu
4 cups pre cooked Jasmine rice
1 (12oz) extra firm tofu sliced into bite size pieces
2 cups mixed vegetables
2 cloves garlic chopped
1 tablespoon shallot chopped
2 1/2 tablespoons vegetarian soy sauce (divided 1 tbsp for tofu)
1/2 teaspoon kosher salt
1/2 teaspoon white pepper powder or black pepper
2 teaspoons dark soy sauce (optional)
2 tablespoons olive oil
