Newsletter

underWARE dinner parties take place once a month and alternate location. One chef is tasked with preparing a themed meal for about 15 people, who reimburse the chef for ingredients (less than $10 apiece). Everyone is encouraged to bring libations to share. To keep things fresh, diners are discouraged to attend two dinner parties in a row.

The dinner parties are reservation-only. Information on them can be found on flyers around St. Louis, in the underWAREs zine and below.

Monday, January 16th        7pm     Skinker-DeBaliviere 

The first anniversary of underWAREs! Chef Andrew compiled a beautiful array of Mediterranean-themed dishes, with the help of Sous chef Rhonda, to the great pleasure of his 16 guests.

Appetizers:
Semi-sour olive and rosemary bread with savory olive oil
Cinnamon sugar white bread with honey butter
4 mini pizzas: raw, cooked, white sauce, pesto


Soup/salad:
Spinach, chevre, walnut, dried fruit
Coconut milk butternut squash bisque

Entree:
Pasta Carbonara
Roast Chicken w/potatoes

Sides:
Lentilles du puy
German sweet and sour cabbage
Beet salad

Dessert:
Apples and honey
Bourbon truffles

underWAREs #11       Sunday, November 6th        7pm     Forest Park Southeast           

Chef Eric served up a palate pleaser, with a variety of cocktail pairings alongside. The generous company of 24 strolled between courses, filling a long apartment with chatter and laughter.

First course:
Miso soup with pickled and unpickled radishes

Second course:
Grilled broccoli next to mashed sweet potato-squash with a pear chutney

Main course:
Korean lettuce leaf burritos with Szeuchwan pepper-spiced shredded roast pork

Dessert:
Poached caramel pears with whipped honey-vanilla yogurt and frozen caramel foam

For our tenth dinner party, Chef Jill prepared a Moroccan feast for 17 eager diners. We were seated on pillows on the floor around one long table:

Hors d'ouevres
Honey, saffron, clove hummus
Spiced tomato dip
Moroccan olives
Bacon-wrapped, gorgonzola-stuffed dates
Bread, nuts

Entrees

Shaved cucumber salad with orange essence
Beef and apricot tagine
Stewed tomato lentils
Olive-lemon cauliflower
Rice, couscous

Dessert
Honey oranges with marscapone
Almond crescent cookies

Pumpkin soup topped with crispy bacon, creme fraiche & chive blossom

Entree
Kale Duo: meatless kale pie with kale chips

Advocaat with cognac & whipped cream, served alongside Thai hot pepper-spiced pumpkin bread

underWAREs #8       Monday, August 29th        7:30pm        $10

Thanks to Chef Blake for a delightful meal as well as all the diners for good company on one of our last hot evenings of the summer. Menu items included: Mexican cole slaw, tacos with both locally grown beef and vegetarian substitute meat, quesadillas, and homemade ice cream covered in chocolate mole sauce to top it all off. And lots of beer. Dinner ended with hugs all around, so we can put a check mark on making friends with strangers. Thanks again for all who participated!

A tribute to a departing Columbian friend & chef

The meal consisted of:
-Tossed salad with avocado & lemon dressing
-Stuffed mushrooms
-Traditional Columbian-style red beans
-Rice medley
-Fried egg
-Arepas (corn patties)
-Panela (an agua fresca prepared with piloncillo)

underWAREs #6:        Saturday June 25th 7:30p                    Día de San Guillermo            Southwest Gardens Neighborhood            $15

On a pleasant and stormy night, 16 diners came together for family-style affair in the Southwest Gardens neighborhood. Complete with an extremely cute dog and distant lightning, guests came early and stayed late. Chefs Matt and Bart prepared home-brewed beer pairings with two of the four courses, including a Double IPA and Hi-Ho Cherry Stout.

Hors d'oeuvres

Courses
1: Gazpacho with Schlafly Hefeweizen

2: Four cheese pizza topped with mixed greens with home-brewed Double IPA

3: Grilled chicken rubbed with rosemary, garlic and sage with Fat Tire Abbey Ale

Dessert
Chocolate truffles rolled in cinnamon & sprinkles with home-brewed Hi-Ho Cherry Stout

On Sunday April 10th, 16 hungry St. Louisians headed to Dutchtown for a beautiful dinner by Maude. Between numerous courses, they talked, laughed and kept cats off the table. It was a casual yet yummy affair.

Hors d'oeuvres
Bagel crostini with pickled beets, cream cheese & kale

First course
Baked butternut squash filled with spinach & topped with a quail egg
Yellow dog farm focaccia bread

Main course
Pea shoot & cream leaf lettuce with pink grapefruit in vinaigrette dressing
Shoulder ham bacon
Amish egg noodles with lamb in a mushroom cream sauce

Dessert
Baked pears and apples with sorghum

The third and largest underWAREs dinner party took place Saturday, March 19th. Chef Michelle prepared a bountiful feast complete with many sweet treats on the night of the SUPERMOON, in honor of San José

Hors d'oeuvres
Beet & apple tartare with herb goat cheese
Seared flank steak on crostini with basil, quince tomato jam
Twice baked fingerling potatoes with aged gouda, balsamic reduction

Entrées
Fresh herb and spinach-arugula salad with blood orange-clementine vinaigrette & pine nuts
Paprika-spiced chicken with pearl rice, roasted peppers, glazed onion relish

Desserts
Strawberry-lime grenata with brandied cherries
Buñuelos (donut holes) with cinnamon sugar / honey / homemade strawberry jam
