Nice Sunday dinner with Jerk Chicken, Tomato risoto and Black beans
Picture 1 is the chicken thigh that was marinated with Jerk seasoning. The marinade was made with Penzey's Jerk seasoning, Lime juice and oil (Over night)
Picture 2 is the chicken going on the smoker with hickory wood chunks cooking in-direct
Picture 3 is the arborio rice being browned to make the risoto, the chicken stock in the container getting ready to add in stages
Picture 4 is the chicken moved over the coals after 40 min cooking at 300*F now getting direct heat to crisp up the skin
Picture 5 is the finished risoto, added some fresh grated parmesan cheese
Picture 6 is a plate with the Black beans added
Chicken was very juicy and tasty, will be making again.
