- 12-15 cups of strawberries-washed, tops removed and cut in half
- 1-2 cups of honey
- 1/4 cups of chia seeds
- 1 tbsp lemon juice (optional)
Instructions: - Place berries, honey and about a half in of water (to prevent sticking) into crock pot. cook on HIGH for ONE hour and then LOW for 2-3 hours. When cooking on low, be sure to leave to crock pot lid slightly ajar to allow steam to escape.
- Once berries are cooked. Give them a taste and add additional honey if needed. Here, I took a potato masher and smashed the berries up a bit but the original recipe did not call for this.
- Stir in lemon juice (if using) and chia seeds.
- Ladle into clean jars.
- Allow jam to set in refrigerator for at least one hour before eating--that gives the chia seeds time to do their thing. You can store the jam in your fridge for up to two weeks and up to a year in the freezer.
