Zambian Food

Zambia has over a thousand dishes with preparations of leaves. Here are some examples.

Katapa (Boiled cassava leaves)

Ingredients

  • 4 Bundles of katapa
  • 2 Big tomatoes
  • 1 Onion
  • 1/4 teaspoon of salt
  • 1/2 cup of cooking oil
  • 4 Big cups of water

Method

  1. Pluck and pound the katapa by hand or in a motor
  2. Put it in the pot to boil for 60 min
  3. Add tomatoes, onion and salt
  4. Also cooking oil
  5. Then boil the mixture for 10 min
  6. Serve with nshima






Fresh cassava leaves with groundnuts

Ingredients
  • 2 or 3 cups of pounded cassava leaves
  • 1 medium tomato
  • 1 small onion
  • 1 1/2 cups of pounded groundnuts
  • 3 table spoons cooking oil
  • Salt to taste
  • Chilli (optional)
  • Water

Method

  1. Place the cassava into boiling water
  2. Boil till tender
  3. Add onion, tomato, cooking oil, salt, chilli and powdered groundnut. 
  4. Stir continuously.
  5. Serve with nshima.

Rape vegetable

Ingredients

  • Rape leaves
  • 1 tomato (not very ripe)
  • 1 small onion
  • 2 or 3 table spoons of cooking oil
  • Salt to taste

Method

  1. Wash the leaves
  2. Chop the leaves into fine strands
  3. Place the rape into a pot and add boiling water
  4. Pour the rape into a colander to drain the water
  5. Fry the onion and tomato in sauce pan
  6. Place the drained rape into the sauce pan.
  7. Mix continuously
  8. Serve with nshima.
