Slow Cooker Pork Chops with Peppers and Tomatoes

Total time: 6 hours 20 minutes

Ingredients:

  • 14oz (400gr) pork chops, boneless, cut in half
  • 1 onion, chopped
  • 1/2 red pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 tsp oregano
  • 2 bay leaves
  • 1 cup (8oz, 240gr) peeled, chopped tomatoes
  • 2 tbs Balsamic vinegar

Instructions:

  • Put the onions, garlic, pepper, herbs, spices in the slow cooker and stir to combine..
  • Top with the pork and spoon tomatoes over the top.
  • Cook on low for 6 hours – stir once if you like.
  • Spoon onto a platter and serve.
