Low Carb Bacon Zucchini Bowl

(makes a side for 2-3 or a meal for one, can easily be doubled)


2 large zucchini

1 large tomato 

3 slices of bacon 


Italian Dressing

Spiral all the zucchini. Chop the tomato. Use kitchen scissors or a knife to cut uncooked bacon into small slices (approximately 1/3 inch). Cook bacon in skillet. Once bacon is cooked, add zucchini spirals. Mix and cook for about 3-4 minutes until zucchini is softened. Strain if necessary. Add to bowl(s) and top with sliced tomato, Feta and Italian dressing to taste.
