Oh Boy! Shoot! Granola


3 cups oat flakes

2 tbsp brown sugar

¼ tsp salt

½ tsp cinnamon


½ cup honey

¼ canola oil

1 tsp vanilla

Preheat oven to 300°F. Mix together oats, brown sugar, salt and cinnamon in a large bowl. In a small bowl mix together the honey, canola oil and vanilla. Pour honey mixture over oats, make sure to use your hands to mix. If the oats aren't coated evenly you will end up with clumps when you bake them!

Pour oat mixture onto baking dish and spread out evenly. Put in the oven for 15 minutes, then give the oats a mix and spread out again. Keep oats in the oven until browned. For my oven this took about 35 minutes.

While oats are cooking, dice up apricots and dates. Mix together the ingredients for each granola in a separate bowl. When the oats are done, let them cool down. Make sure to stir them up while they are cooling or they will harden together into clumps. When the oats are cool, mix them in with the fruit and nuts. Adjust amount of nuts and dried fruit according to your tastes. Keep in a sealed container and enjoy!
