GREEN CURRY CHICKEN

This is just a basic outline.   Adapt to suit personal taste.

Boneless chicken breasts sliced thin
onions
garlic
red and green peppers
hot red chili
bamboo shoots
coconut milk
chicken broth
green chili paste
lime
cilantro

Stir fry chicken in a little oil. Do not brown.  Remove from Wok.  Add onions, garlic, green and red red peppers.  Saute for a few minutes.  Add the coconut milk, chicken broth and green chili paste.   Add the chicken  and bamboo shoots and simmerAdd a squeeze of fresh lime, cilantro and thin slices of hot red chili pepper.  Serve with rice.
