Greek Potatoes

Russet Potatoes
Garlic Cloves (peeled and cracked)
Oregano
Salt
Pepper
olive oil
Chicken Broth
Fresh lemon juice

Cut potatoes lengthwise or into quarters.  Heat oven to 450°.   Add olive oil to heavy oven proof skillet.    Add potatoes and garlic cloves.  Season with salt, pepper and oregano.  
Add chicken broth and juice from one or two lemons.    Place in oven and roast until potatoes are tender.   Add more chicken broth so there is always a little in the bottom of the pan.
