Granola Bars

2 cups Old Fashioned Oatmeal
1 cup of sweetened shredded coconut
1/2 to 3/4 cup sliced almonds
1 cup Dried Cranberries

4 tablespoons butter
1/4 cup honey
1/4 cup maple syrup
1/3 cup brown sugar
1 tablespoon vanilla
1/4 to 1/2 teaspoon sea salt
1/4 to 1/2 teaspoon cinnamon (to personal taste).

Preheat oven to 350°F.  Place oatmeal and almonds on cookie sheet and bake for 10 minutes stirring at least once.  Add the coconut and continue to bake for another 5 minutes or until mixture is golden.  Do not over bake. 

Reduce oven to 275°

Butter square cake pan.  Place a piece of parchment across bottom and up and extended over the sides. 

Melt butter with honey, maple syrup and brown sugar.  Cook for a minute or so until the brown sugar dissolves.   Remove from heat and add the vanilla and salt.  Pour over oatmeal mixture, add cranberries, sprinkle with cinnamon and toss well. 

Pour mixture into  prepared pan and press down hard.   Bake for 20 to 25 minutes.  Remove from oven and let cool.  Using the parchment, lift granola out of  the pan and place on cutting board.  Cut into bars.
