Chicken Rice and Tomato Soup

Basic Outline


Chicken broth,
Large white onion chopped
3 to 4 stalks of celery sliced
2 cloves of garlic, cracked.
fresh chopped parsley
lots of fresh thyme
1 to 2 bay leaves
1 to 2 chicken breasts, bone in
1 large can of Italian Tomatoes, drained
and tomatoes broken up into pieces. (use your fingers).

Options:  Add sliced zucchini
green beans
cooked navy beans, pinto,  etc...

Cooked rice. (I cook the rice while the soup is simmering)

Add all the ingredients to the pot (except the navy beans if using)

Simmer until the chicken is tender.  Remove the chicken from the
pot and cut or shred into small pieces.   Add back into the pot with
cooked beans if using.   

Spoon some rice into a bowl and laddle in the soup.

OPTION:  Good with noodles instead of rice.
