Chicken in Sun-Dried Tomato and Basil Cream Sauce

4 boneless chicken breasts
1 to 2 tablespoon olive oil
1 tablespoon butter
2 garlic cloves minced
1/2 cup chicken broth
1/2 cup whipping cream
1/4 cup sliced sun-dried tomatoes (Not oil packed)
3 to 4 tablespoons basil (Chiffionade)

Season chicken with salt and pepper.
Heat oil and butter in heavy skillet.  Brown chicken on both sides. 
Add garlic and cook for 20 to 30 seconds.  Just until fragrant. Do not
brown.  Add chicken broth, cream and tomatoes.  Cover and simmer on low
until chicken is cooked through.   Stir in basil and serve.

NOTE: Next time I make this I will season with a little hot red pepper
flakes.

OPTIONS:  Serve with fresh grated parmesan cheese
Substitute fresh Oregano for Basil.
