Apple Walnut Cake

1 c Sugar
¾ c Cooking oil
2 Eggs
1 ½ c Flour
1 c Walnuts; chopped
1 tsp Baking soda
1 ts Salt
1 tsp Vanilla
2 c Unpeeled chopped apple
      
Method

Mix sugar and oil. Add eggs, beat until fluffy. Sift dry ingredients together and add to sugra, oil, and egg mixture. Blend in vanilla. Fold in black walnuts and chopped apples.
Pour into a well greased and floured loaf pan.
Bake at 180C/355F for 40 minutes.


Icing

4 tbsp Butter
1 tsp Vanilla
½ lb Confectioner's sugar

 Soften butter and blend with powdered sugar. Add vanilla. Use cream to blend to a spreadable consistency.
