Rose Harissa Recipe

Follow the basic Harissa recipe.  The method is the same, you are simply adding more ingredients:

 

1 Cup of fresh Rose Petals (before I

continue, please make sure your rose petals have not been treated with any insecticides or fertilized with anything potentially harmful.  If you are not lucky enough to have a rosebush that is au natural to pilfer in the back yard, try gourmet shops or the Internet- MAKE SURE THAT THEY ARE FOOD GRADE)

1 teaspoon of ground Rose Hips       

1 Tablespoon of Lavender

1 teaspoon of Orange Blossom Water

1 teaspoon of Rose Water

½ Teaspoon of Black Pepper

4 or 5 Coriander pods                             

6Whole Cloves

½ teaspoon of Turmeric

2 teaspoons of  Sesame oil

Zest of one Orange

One Whole Star Anise

1 inch piece of cinnamon

½ teaspoon of Galingal ( ginger will suffice, but just that.)

½ teaspoon of Mace

½ teaspoon of Saffron

¼ teaspoon of Grains of Paradise

¼ teaspoon Red Mustard Seed

2 Teaspoons of Jaggery or Raw Sugar


Remember to roast all of your whole  spices before blending to release their essential oils.  Add your petals, Rose Hips, flower waters and sugar after you have ground you whole spices.

You see why I say that making this would be a labor of love?
