Chilled Watermelon 'Chaat' Salad

4 cups watermelon cubes, chilled
1 long English cucumber, cubed
1 mango, peeled, stoned and cubed
1 small red onion, chopped
1 teaspoon fresh lemon or lime juice
¾ - 1 teaspoon chaat masala
Large pinch of salt
Large pinch of sugar
A large handful fresh cilantro, chopped


Combine the cubed watermelon, cucumber, mango (if using) and red onion in a large bowl.

Stir in the fresh lemon or lime juice, tossing gently to coat well.

Sprinkle over the chaat masala. Taste and season with a pinch of salt and sugar to balance the flavours.

Garnish with lots of fresh cilantro, and serve immediately.
