Strawberry Pie

Crust
  1. In a food processor, add 2 packages of graham crackers
  2. Pulse until all crackers are ground up
  3. Add 6-8 tablespoons of softened butter; pulse together.
  4. Pat into a springform pan & bake at 325 degrees for 5-10 minutes {just to set the crust}
Pie Filling
  1. In a pot, cut & hull 2 lbs of Strawberries
  2. Add the juice & zest of 1 Lemon
  3. Add 1 Cup of Sugar
  4. Add 1/4 Cup of Cornstarch
  5. Place over medium to medium high heat & stir until the filling becomes thick 
  6. Pour into crust
  • Let the pie cool down on the counter for a little bit, and then pop it into the fridge to chill.
