Strawberry Cake

Strawberries & Strawberry Syrup
 
Clean, Hull & Cut 2 lbs of fresh Strawberries into a bowl the night before you make your cake.  Add 1 cup of Sugar to the Strawberries, mix, and leave alone over night.
 
In the morning, strain the liquid into a saucepan.  Place the saucepan over medium heat, and let the Strawberry juice reduce down to a thicker syrup.
 
Meanwhile, take a potatoe masher and mash the strawberries into eatable/chucky pieces.
 
You now have Strawberry Syrup & Mashed Strawberries
Cake Ingredients
 
1 3/4 Cups Cake Flour
        *To make Cake Flour sift 1 3/4 Cups of reg. flour with 1/4 Cup cornstarch.
1 1/4 Cups All Purpose Flour
2 Cups of Sugar
1 Tbl Baking Powder
3/4 Tsp Salt
1 Cup of Butter
4 Eggs
1 Tsp Vanilla
1 Cup Mashed Strawberries
1/4 Cup Strawberry Syrup
 
Strawberry Frosting
 
1 Can of Whipped Vanilla Frosting
Remaining Strawberry Syrup
Remaining Mashed Strawberries
Juice from 1 Lemon
Baking Directions
  1. Preheat your oven to 325 degrees
  2. Grease 2 Cake pans-the ones I used were 9 inch squares.
  3. Using a sifter, sift together the following ingredients: cake flour, regular flour, sugar, baking powder & salt.  Add into the mixing bowl.
  4. Next add in the butter.  With the paddle attachment, turn on the machine and let it do it's work crumbling the butter into the flour {it should look like cornmeal afterwards}.
  5. In a large mixing cup, beat together the 4 cups.  Add in the mashed strawberries, strawberry syrup & vanilla.
  6. With the mixer running, slowly add the wet ingredients into the dry, incorporating everything.
  7. Divide batter into the 2 pans.  Bake for 25-30 minutes until the cakes are set & a toothpick comes out clean.
  8. Let the cakes cool for a couple of minutes on a wire rack and then remove them from the pans and cool.
Frosting Directions
  1. Because the syrup will start hardening up {thanks to the reduction of sugar}, in the same saucepan {with the remaining syrup} add the rest of the mashed strawberries, and lemon juice.
  2. Put the saucepan on low heat and stir together until everything is liquid again.  Let it cool.  This is your Strawberry goodness.
  3. In a mixing bowl, add the can of whipped frosting & strawberry goodness.  Mix together until everything is cohesive
Cake Set-up
  1. After the cakes have cooled completely, level them; giving yourself a level surface.
  2. Lay one cake down.  Slather some frosting over the top.
  3. Lay the second cake down.  Use the rest of your frosting and cover the cake.
