Pomegranate Couscous

1 Box of Near East Couscous {10 oz}
1 Pomegranate
1/2 Cup of Toasted Pinenuts
3 Tbl Red Wine Vinegar
2 Tbl Olive Oil
Pinch of Salt
  1. Make Couscous according to package
  2. Whisk together the dressing ingredients {Red Wine Vinegar, Olive Oil & Salt}
  3. When Couscous is ready & fluffed, mixed in the pomegranate arils, toasted pine nuts, parsley {just enough to give it some color}, and the dressing. Combine everything together.
  4. Dish & enjoy!
