Mixed-Berry Lemon Pie

Graham Cracker Crust
  • 2 Packages of Graham Crackers-crushed
  • 2 Sticks of Butter
  • 1/2 Cup Brown Sugar
Lemon Filling
  • 1/3 Cup Cornstarch
  • 1 Cup Sugar
  • 1/8 tsp Salt
  • 1 1/2 Cups Warm Water
  • Zest of one Lemon
  • 1/2 Cup of Lemon Juice
  • 4 Egg Yolks
  • 1 Tbl Butter
1 Package {12 ozs} of frozen mixed berries.......or if you have fresh, use that.
  1. In a microwave safe container, put the brown sugar & butter together, and melt.
  2. In your pan of choice, combine the graham crackers & melt butter/sugar combo together.  Press into the pan.  Bake @ 350 degrees for 10 minutes.
  3. In a sauce pan, combine the cornstarch, sugar and salt.
  4. Stir in the zest, water, & lemon juice; cook over medium heat & contiually stir until the mixture boils.  It will take awhile.....just be patient.  When the mixture comes to a boil, remove from the heat.
  5. In a small bowl, whisk the eggs together.  To temper them, slowly add in some of the hot mixture to the egg yolks {while continually stirring}.  Pour the eggs into the hot mixture, stirring them in.
  6. Return to the heat & cook, while stirring, until the mixture is thick {do not boil}; this won't take very much time.
  7. Take filling off the heat and add in the tablespoon of butter, and stir until melted.
  8. Take your frozen fruit and pour onto the graham cracker crust-a nice even layer.
  9. Pour filling on top of fruit.  Smooth out.
  10. Refrigerate until the filling is set.
  11. ENJOY!
