Cilantro Pesto Pasta Salad

Cilantro-About 1 Cup or a handful {stems and all}
1 Garlic Clove
1/4 Pinenuts
Juice & Zest from 1 Lime
Olive Oil
*Pasta Water-just to thin it out if needed
  1. In a food processor, pulse together the cilantro, garlic, pinenuts & Lime {juice & zest}
  2. Stream in some Olive Oil {probably about 1/4 Cup} until everything comes together.
  3. If you need to thin out the sauce, stream in some pasta water until the desired consistency.
Pasta Salad
1 lb of Pasta cooked {I used fusilli}
Pinenuts-about a handful or two
1 Cup of Corn
Roasted Sweet Peppers- 2 Bell Peppers worth, sliced
Putting it Together
Very easy.  In a large bowl, combine everything together & chill.
