Salmon Burgers

1 can (14-3/4) salmon, drained, skin and bones removed
2 eggs
1/2 c. dry bread crumbs
1/4 c. finely chopped onion
1/4 c. mayonnaise
2 T. prepared horseradish
1 T. pimentos
1/4 t. salt
1/8 t. pepper
2 T. butter

Combine the first nine ingredients; mix well.  Shape into four patties  In a skillet over medium heat, cook patties in butter until browned, about 6 minutes on each side.  Serve on whole wheat hamburger buns or over a green leafy salad.
