Indian Spiced Glazed Carrots

2 Tbsp. oil or butter
1 pound of carrots, sliced
1/2 medium onion, sliced
4 cloves garlic, minced
1 tsp. garam masala
3-4 Tbsp. mild chutney
Optional: raisins, chopped black garlic, chopped crystallized ginger or pistachios

In a large skillet, heat the oil or butter over medium high heat.  Add the carrots and onions and cook until onions have taken on a golden brown color and the carrots are starting to soften.  Add the garlic and garam masala and cook for 2 min.  Add the chutney and cook for another 2 minutes or until the chutney is completely heated.  Serves 4.
