2 or 3 cloves of garlic
1/2 t. salt
1 (16 oz.) can chickpeas, drained and rinsed
1/3 c. tahini
1/4 c. olive oil
2 T. lemon juice (fresh is best)
1/2 c. water

Smash garlic on a cutting board and with a sharp knife, mince finely adding the salt to make a paste.  In a food processor or blender, combine the chickepeas, tahini, olive oil, lemon juice and prepared garlic paste.  Start blending the contents, add about 1/4 c. of the water.  Add water a little at a time until you reach the consistency that you like.  Adjust seasoning.  Serve with pita or tortilla chips.
