Summer Corn Dip

Ingredients

  • 1 can yellow corn kernels with peppers, drained
  • 1/2 cup light mayonnaise
  • 4 scallions, chopped
  • 1/2 cup reduced-fat Cheddar cheese, shredded
  • Fritos corn chips, for serving

Mix corn kernels, mayonnaise, scallion, and cheese in a small bowl. Cover and allow to refrigerate for at least 4 hours, or preferably overnight.

Serve with Fritos corn chips.
