Spicy Cheddar Chicken Burgers with Bacon and Guacamole


Serves 4

  • 1 lb. ground chicken
  • 1/2 small onion, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 2 tsp. garlic, minced
  • 1 small jalapeño, seeded and chopped
  • 1/2 tsp. ground cumin
  • 1/2 tsp. paprika
  • 1/3 cup Cheddar cheese, finely shredded, plus extra for topping
  • Salt and pepper, to taste
  • 4 hamburger buns
  • 4 slices bacon, cooked and broken in half
  • Guacamole, for serving

Heat an indoor or outdoor grill to medium.

Transfer the ground chicken to a medium bowl. Add in the onion, cilantro, garlic, jalapeño, cumin, paprika, 1/3 cup cheese, salt and pepper. Mix all ingredients together just until incorporated

Form the mixture into four patties. Grill burgers until cooked through, about 5-7 minutes per side. Add extra cheese on top of burgers 2 minutes before being done.

Serve each patty on a burger bun topped with 2 halves of bacon and guacamole.
