No-Bake Energy Bites


  • 1 1/2 cups lightly salted nuts (I used almonds, walnuts, cashews and sunflower seeds)
  • 4 tbsp. unsweetened cocoa powder
  • 4 tbsp. Splenda
  • 1 tbsp. vegetable or canola oil
  • 1 tbsp. coconut milk
  • 1 tbsp. natural almond butter
  • Coconut, shredded, for garnish (optional)
  • Cocoa powder, for garnish (optional)
  • Additional nuts, chopped, for garnish (optional)
Pour nuts into the bowl of a food processor. Pulse until nuts turn into a coarse meal. Pour in cocoa powder, oil, milk and almond butter. Continue pulsing until a very thick mixture forms. Add additional milk if it is not sticking together. Once you have a thick paste, scoop into small balls. Roll in shredded coconut, cocoa powder or chopped nuts. Store in an air tight container until ready to eat.
