Grilled Lemon and Caper Salmon in a Foil Pack


  • 4 (6 oz.) salmon filets
  • 4 tbsp. extra-virgin olive oil
  • 4 tbsp. fresh lemon juice
  • 8 lemon slices
  • 4 tsp. capers
  • Salt, to taste

Prepare grill to medium-high heat.

Prepare four pieces of aluminum foil that are large enough to hold a filet and fold over and seal. Spray each piece of aluminum foil with cooking spray. Place a salmon filet on top.

Drizzle 1 tbsp. oil and 1 tbsp. lemon juice over each filet. Sprinkle with salt. Top with two slices of lemon and 1 tsp. capers. Wrap up salmon tightly in the foil packets.

Place the packets directly on the grill and cook for 10-12 minutes or until cooked through. (Alternatively you can bake in the oven at 400 degrees F for 20-25 minutes.) Serve salmon from packets.
