Fresh Corn Salad


  • 2 fresh ears of corn, shucked
  • 1/2 green bell pepper, chopped
  • 1 medium tomato, deseeded and chopped
  • 1 shallot, chopped
  • 2 basil leaves, chopped
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Cut the kernels off of the cob. Toss in a large bowl with the bell pepper, tomato and shallot.

Drizzle the vinegar, olive oil, salt and pepper over top. Toss to combine. Add the chopped basil leaves just before serving.
