Fajita Nachos


  • Leftover fajita filling
  • Tortilla chips
  • Jarred sliced jalapenos
  • Salsa/tomatoes
  • Light sour cream, for serving (optional)
  • Guacamole, for serving (optional)

Preheat broiler to low.

Heat up the leftover fajita filling in the microwave. Cut into bite-size pieces.

In an oven-proof dish, spread chips evenly. Top with fajita filling, jalapenos, salsa and/or tomatoes. Sprinkle with cheese.

Place under broiler and heat just until cheese is melted and bubbly.

Serve immediately with sour cream and/or guacamole.
