Bruschetta Crackers


  • 1 cup chopped plum tomatoes
  • 1/2 cup reduced-fat Mozzarella cheese, shredded
  • 1/4 cup chopped green onions
  • 1 tbsp. light Italian dressing
  • 2 tbsp. reduced-fat Parmesan cheese, grated
  • 36 Ritz reduced-fat crackers

Preheat oven to 400 degrees F.

Mix tomatoes, cheese, onions and dressing together. Spoon 2 tsp. of the tomato mixture onto each cracker. Sprinkle with Parmesan cheese. 

Place on baking sheet. Bake 8-10 minutes or until cheese is melted. Serve warm.
