- 1 cup chopped plum tomatoes
- 1/2 cup reduced-fat Mozzarella cheese, shredded
- 1/4 cup chopped green onions
- 1 tbsp. light Italian dressing
- 2 tbsp. reduced-fat Parmesan cheese, grated
- 36 Ritz reduced-fat crackers
Preheat oven to 400 degrees F.
Mix tomatoes, cheese, onions and dressing together. Spoon 2 tsp. of the tomato mixture onto each cracker. Sprinkle with Parmesan cheese.
Place on baking sheet. Bake 8-10 minutes or until cheese is melted. Serve warm.
