Tzatziki (Greek Cucumber Salad)

(Makes 1 1/2 Cups)

Ingredients:

  • 1 cup Greek (strained) Yogurt
  • 1/2 of one large cucumber (peeled, seeded, shredded, and squeezed)
  • 2 cloves garlic, minced
  • 1 tsp dill
  • 1 tbsp lemon juice
  • 1 drop mint extract, or 1 tsp mint leaves
  • 1/2 tsp sugar (optional)
  • salt and pepper to taste

Directions:

Mix everything together.
