Mushroom Magic Pasta

8.5 oz. Gemelli Ready Pasta

1 cup part skim ricotta cheese

1 cup 2% milk

8 oz sliced baby Bella mushrooms

1 tsp minced garlic

1/2 T unsalted butter

1 T olive oil

salt & pepper

2-4 T grated Parmesan or Italian Blend cheese

Melt butter in large skillet with olive oil over medium high heat.  Add mushrooms and saute until juices release and mushrooms turn golden, stirring occasionally, about 5-8 minutes.  Add garlic and stir for 30 seconds.  Lower heat to medium. Add ricotta and milk and season everything with salt and pepper.  Cook and stir until sauce reduces and thickens, about 4-5 minutes.  Microwave ready pasta according to package directions and add to sauce. Stir to coat.

Sprinkle with Parmesan or Italian Blend cheese and serve immediately.  2 servings
