Watermelon, Arugula, & Feta Quinoa Salad

Watermelon, Arugula, & Feta Quinoa Salad (4-6 servings)  

Dressing

  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red-wine vinegar
  • 1/2 teaspoon table salt, or to taste
  • 2 tablespoons extra-virgin olive oil

Salad

  • 1 cup quinoa, uncooked
  • 2 cups cubed (1/2 to 3/4 inch) seeded watermelon, drained
  • 3 cups baby arugula (3 oz)
  • 1/4 cup pine nuts
  • 1/3 cup crumbled feta
  • 1/4 cup chopped kalamata olives
  • 1/4 cup small diced red onions
  • salt to taste
Whisk together lemon juice, vinegar, and salt in a large bowl, then add oil in a slow stream, whisking until emulsified.

Prepare quinoa according to package directions and set aside to cool. Once quinoa has cooled completely combine with remaining ingredients and toss with dressing until well combined.
